Healthy Apple Oatmeal Muffins
Is there anything better than a just-out-of-the-oven steaming muffin? What if that muffin was healthy and also froze well so you always had some on hand?
I often recommend including this recipe as part of meal prep for postpartum because it is sugar-free ad includes nutrient-dense ingredients such as whole oats, eggs, and Greek yogurt. And once cooled, they can be frozen and kept in the freezer for months.
This apple oatmeal muffin recipe is on regular rotation at my house for all of these reasons. I particularly love making it in the fall when local apples are in abundance.
Healthy Apple Oatmeal Muffin Recipe
Prep time: 20 minutes
Makes 12 muffins
Ingredients:
1 cup whole wheat flour
3/4 cup rolled oats
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup grated apple
1 cup diced apple
1/3 cup melted butter or coconut oil
1/2 cup maple syrup or honey
2 eggs
1/2 cup Greek yogurt (ideally full-fat)
1/2 cup applesauce
1 tsp vanilla extract
Instructions:
Preheat your oven to 425F/220C. Grease a 12-cup muffin tin with butter.
In a large bowl, add the flour, oats, baking powder, baking soda, cinammon, and salt. Mix well.
Add the grated apple and chopped apple. Stir to combine.
In a separate medium-sized bowl, whisk together the butter/coconut oil and maple syrup/honey. Add the eggs and whisk well. Add the yogurt, applesauce, and vanilla and whisk again.
Pour the wet ingredients into the bowl with the dry ingredients. Mix with a large spoon until just combined.
Pour the batter evenly into the 12 muffin cups.
Bake the muffins for 13-16 minutes, or until the tops are starting to brown and a toothpick inserted into a muffin comes out clean.
Cool the muffins on a cooling rack.
