Cozy Beef and Potato Hash

This is one of my favourite budget-friendly, quick and easy recipes. I love it for all those reasons, plus that it’s packed with nutrients, feels so comforting to eat, and can be made in a large batch with lots leftover for future meals, including as part of a postpartum freezer meal stash.

The recipe base is pretty simple, and there are many ways to make this dish your own. I’m sharing my favourite add-ins in the recipe below; feel free to play around and add your own favourites. This recipe can easily be made vegan or vegetarian by using your favourite plant-based meat substitute in place of the ground beef (e.g. tofu, plant-based meat, lentils, or chickpeas).

Cozy Beef and Potato Hash

Prep time: 30 min

Makes 4 servings

Ingredients:

1 lb ground beef

2 tsp grapeseed oil or olive oil

3-4 red potatoes, diced into small pieces

1 medium yellow onion, chopped

3 garlic cloves, pressed or minced

Your favourite additional vegetables: I like to use mushrooms and green pepper

2 tomatoes, chopped

4 eggs (optional)

Diana Sauce (optional)

Salt and pepper

Instructions:

  1. In the largest pan you have, cook ground beef until mostly cooked through, breaking it up with a wooden spoon as it cooks. Remove from pan and set aside.

  2. Heat the oil in the pan over medium heat. Add onion and a sprinkle of salt. Cook, stirring occasionally, until the onions begin to soften, about 5 minutes.

  3. Add the garlic and potato, another sprinkle of salt and a bit of pepper. Continue to cook, stirring occasionally, until the potatoes start to soften, about 5-7 minutes depending on the size of your potato pieces. Reduce the heat if the vegetables start to brown.

  4. Add in any other vegetables, except the tomatoes, and continue to cook until the potatoes are cooked through.

  5. In the meantime, cook the eggs if you’re using them. My favourite way to include them in this recipe is poached (instructions on how to poach an egg can be found here) but fried works well too.

  6. Add the tomatoes as well as the reserved ground beef. Stir to combine and cook for an additional 2 minutes. Remove from heat.

  7. Add more salt, pepper and Diana Sauce, if using, to taste.

  8. Enjoy!
